- He was a farmer, according to the 1860 census.
- For the year 1861, Jesse Dooley was assessed for property in Montgomery County: 250 acres in the J. B. Tong survey valued at $625, and four horses valued at $200. Tax paid: state $1.86, county $.77.
- Jessy Dooley, age 28, enlisted as a private in Capt. James B. Stephenson's Company, Elmore's Regiment Texas Infantry (later Company I, 20th Texas Infantry Regiment) on 30 April 1862 in Montgomery County. He mustered in at Camp Travis in Hempstead on 14 May, having traveled 56 miles to rendezvous. According to regimental returns, he was on duty guarding the CSS Bayou City in Galveston Bay Pelican Spit in Galveston (2 June 1864); Garn? from desertion (Pelican Spit, 7 Dec 1864); and 27 March 1865 absent without leave.

- On Tuesday, 2 December 1862, Green Wood recorded in his plantation daily account book: "Mr W. with four Boys got up 26 hogs for Mrs Dooley."
- On Tuesday, 30 June 1863, Green Wood recorded in his plantation daily account book: "Hauled a load cotton from Dooleys," and on Friday, the 3rd, "Packed 3 Bales cotton for Dooley weighing 565, 540, 395."
